Stuffed Peppers

Vegans and non vegans will fall in love with this fan favorite.

Prep & Cook time = 50 min

Ingredients:

4-6 red , yellow, or orange peppers

1 zucchini (optional)

1 -2 cups chopped mushrooms

1/2 cup diced onion

1 clove minced garlic

1 pack Trader Joes beetles crumbles

1 cup rice ( white, brown, cauliflower, or quinoa)

1/2 lentils ( optional)

1 cup black beans

any other veggies you would like to add

1 bag vegan shredded cheese

3/4 car of Trader Joes Marinara Sauce

Instructions:

  1. pre heat oven to 375 degrees

  2. cook rice

  3. cut tops off peppers, wash and clean out the seeds

  4. place washed peppers and tops on a tin foiled covered baking sheet

  5. in a large frying pan, lightly coat with olive oil or spray

  6. add garlic, onions and let brown for 2-3 min

  7. add chopped mushrooms, zucchini and other veggies as desired until starting to brown

  8. then add beetles crumbles and sauté 2-3 minutes, make sure everything is mixed together

  9. add the sauce and let simmer

  10. add the black beans, rice and stir until combined 100%

  11. stuff the peppers to the top

  12. sprinkle cheese on top

  13. bake for 25-30min
