Vegan Pancakes
If you are like me, then you LOVE pancakes, but don’t make them often for one reason or another. Perhaps it’s because it takes too long, too messy, or they never come out the way you want them. Also, you don’t eat them out often, because most restaurants unfortunately don’t serve them unless you are at an all vegan restaurant.
After trying out several vegan pancakes combinations, I have found this one to be my ultimate favorite. It doesn’t take so long to make or clean up, a perfect serving for one person if you are really hungry or you can share with someone special.
Ingredients:
1 cup flour
2 tbs sugar
1 tbs baking powder
1 cup almond milk
pinch of salt
1 tbs apple cider vinegar
1 tsp vanilla extract
Vegan butter
Instructions:
mix dry ingredients together in medium bowl. Flour, sugar, baking powder and salt.
mix liquid ingredients together in a small bowl. Almond milk, apple cider vinegar, and vanilla extract
pour liquid ingredients into medium bowl with dry ingredients and whisk until smooth
let batter sit for about 5 min to thicken a little bit
while batter is sitting, heat pan / griddle medium to high heat, add vegan butter to liking and let melt
pour about 1/2 cup of batter when pan is hot
when top of batter begins to bubble flip pancake. Should cook about 2-4 min each side.
cook until golden brown and voila
